Coco Electro-cubes
Lightly sweet, coconutty, with refreshing lime and cucumber notes. Cooling, hydrating, and perfect as a snack after workouts or to jazz up your water bottle or mocktails.
Makes ~20 small cubes (depending on mould/tray size).
For a plant-based version, replace gelatin with agar-agar (made from algae).
Ingredients (per serving):
-
1 sachet Thirst Trap Lime & Cucumber electrolyte powder
-
500ml coconut water
-
10g gelatin powder (about 1 tablespoon)
-
50ml hot water (not boiling) to bloom gelatin
-
Optional: 1-2 teaspoons honey or agave syrup for extra sweetness.
-
Optional: Other fruits such as strawberries, blueberries or mango.
Method:
-
Bloom the gelatin: In a small bowl, sprinkle gelatin over 50ml hot water. Stir well and let sit for 5 minutes to fully bloom.
-
Mix the electrolyte powder: In a separate jug, dissolve the Thirst Trap electrolyte powder into the coconut water, stirring until mostly combined.
-
Combine: After the gelatin has bloomed, gently warm it if needed to ensure it’s fully liquid with no lumps.
-
Stir together: Pour the gelatin mixture into the coconut water + electrolyte mix. Stir thoroughly until evenly combined.
-
Set: Pour into a small tray or silicone mould. Add other fruit such as mango cubes, blueberries, or strawberries. Chill in the fridge for at least 2-3 hours until set firm.
-
Cut and serve: Slice into cubes and store chilled. Enjoy as hydrating jelly bites on their own or add to drinks for a fun, functional twist.
